Tis’ the season for pumpkin spice EVERYTHING! Here’s a healthier alternative to pumpkin cookies and cheesecakes. Pumpkin spice waffles are a fall breakfast staple (or at lease they should be)!
Ingredients:
1 cup all purpose flour
2 teaspoons baking powder
¾ teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground cloves
1 cup low-fat milk
½ cup pumpkin puree
¼ cup packed dark brown sugar
1 tablespoon vegetable oil
1 large egg, slightly beaten
cooking spray
Instructions:
Combine flour, baking soda, cinnamon, salt, and ground cloves in a large bowl. Combine milk, pumpkin puree, sugar, oil and egg in a separate bowl and then add to the flour mixture. Stir until moist.
Coat waffle iron with cooking spray and preheat. Spoon about ¼ cup batter per each waffle. Cook 5-7 minutes.
