¾ cup crumbled feta
½ cup chopped spinach
3 tablespoons cream cheese
¼ cup chopped scallions
2 cloves garlic, minced
3 tablespoons extra virgin olive oil
4 boneless, skinless chicken breasts
Preheat oven to 450 degrees.
In a bowl, mix first 5 ingredients. Cut a lengthwise pocket into each breast. Stuff each pocket with spinach mixture.
In an ovenproof skillet, heat olive oil over medium-high and cook chicken until golden (about 4 minutes per side). Transfer to oven and bake for an additional 5-7 minutes.
